Food Expert Advisory Board

The Consumer Observatory Food Expert Advisory Board is a group of European food systems experts who provide new insights, advice and guidance to the Consumer Observatory around existing and emerging challenges in food-related behaviours, and explore new opportunities aligned to food consumption trends.

Sarah Decoine, BettaF!sh

Sarah Decoine has a background in Marketing and started at BettaF!sh in 2021 before the startup even had a brand name. Since then, she has found her spot in the Business Development team and has brought BettaF!sh's seaweed-based fish alternatives to market across Germany and beyond. In her free time, she volunteers as Lead Ambassador for FoodHack Berlin, a community that gathers local founders, investors and foodtech professionals to connect, exchange, and drive investments into F&B tech that matters.

Marie Breysse, ShakeUp Factory

15+ y.of experience in several marketing, brand development , innovation , communication positions at Unilever turned intrapreneur since 2015 where she managed the creation and deployment of ventures inside an internal Unilever food incubator in the UK. Marie joined Shakeup Factory 4 years ago where she has been coaching startups daily, leading startup acceleration programs as well as open innovation consultancy projects for the food industry and more recently contributed to the EIT Food Protein Diversification Think Tank. She has a solid understanding of consumer behaviors & expectations, global foodtech environment, trends and foresight.

Cortney Price, FAO

Cortney Price is a humanitarian and development professional committed to enabling change through human-centred approaches. As Lead for Behavioural Science at the Office of Innovation of the UN Food and Agriculture Organization, Cortney spearheads efforts to foster an innovation culture across FAO and its programmes by mainstreaming the use of behavioural insights. Through participatory action and experiential learning, Cortney’s efforts empower FAO staff and country partners to explore new ways of working, spark out-of-the-box thinking and generate and leverage behavioural evidence – evidence that enhances project design and drives implementation towards increased impact. Some of Cortney’s critical focus areas include food choice, food loss and waste, climate change and One Health.

Professor Monique Raats, University of Surrey

Professor Monique Raats is a founding Co-Director of the University of Surrey's pan-university Institute for Sustainability and Director of the Food, Consumer Behaviour and Health (FCBH) Research Centre, a leading research centre for the study of food-related behaviour and policy and part of the University of Surrey team that was awarded the Queen’s Anniversary Prize for Higher and Further Education in recognition of its excellence in the field of food and nutrition. Our research focusses on food-related behaviour and policy interventions to achieve sustainable and healthy lifestyles; social, policy and ethical issues relevant to grand societal challenges such as sustainability and obesity; study of food systems from the perspective of significant system actors and stakeholders; and methodologically advancement of food consumer science through exploring novel sources of data and methods of data linking. Prof Raats has published 150 refereed papers, 20 book chapters and has edited two books (The Psychology of Food Choice and Food for the Ag(e)ing Population.

Viktoria Soos, Climate Smart Elephant

Viktoria is a psychologist, sustainability communication expert, founder of Climate Smart Elephant communication and education agency. Having participated in numerous local, national and EU-level programmes and projects as communication strategist, climate innovation coach and facilitator, Viktoria has led 24-hour hackathons and expert exchange programmes, organised online and offline conferences, held webinars for an international climate coach network, and is currently helping municipalities to communicate climate topics and projects more effectively.

Gabriel Torres, Pascual Innoventures

Gabriel Torres is the CEO of Pascual Innoventures, the CVC of Grupo Pascual, a diversified F&B Spanish company. Gabriel has a rich career history spanning technology - working at Google in areas of Analytics - financial services, entrepreneurship, and corporate innovation. He now works towards solving global challenges in the agri-food industry. He holds an MBA from MIT and an Msc in Theoretical Physics from Imperial College London.

Professor Hans van Trijp, Wageningen University

Professor Hans van Trijp is Professor of Marketing and Consumer Behavior (MCB) and Xhair of the MCB group at Wageningen University in the Netherlands. For many years he has combined this function with a (part time) affiliation as Senior Consumer Scientist at Unilever Research and Development in Vlaardingen, The Netherlands. His work focusses very much around the question of “how can insights from the marketing and consumer behaviour domain be exploited and extended to understand consumers’ healthy and sustainable choices, also as a source of inspiration for effective interventions”. The work of the MCB group focuses on a diversity of issues ranging from consumer oriented new product development to strategy and intervention design in the areas of animal welfare, food waste reduction, healthy eating and labelling, among many others. Hans has been an active member of the Dutch Council of Animal Affairs, advising the Dutch government on animal welfare and health related issues.

Dr. Laura Fernández Celemín, EUFIC

Laura’s background is in dietetics & human nutrition with a PhD in Biomedical Sciences from the Catholic University of Louvain in Belgium. She joined EUFIC in 2002 fulfilling different roles in the organisation before taking its leadership in 2015. Her role as Director General of EUFIC includes developing andempowering a team of 25+ to make a difference in people’s lives through behaviour-change communication and evidence-based activities. EUFIC is a consumer-oriented, non-profit organisation that aims to improve people’s understanding of food and health throughengaging information and activities to facilitate healthier and more sustainable diet and lifestyle choices. Laura is an ENLPer (ENLP is the European Nutrition Leadership Platform), Editorial Board Member of the Nutrition Bulletin, Chair of the Stakeholder Advisory Board of Heathy Diet for Healthy Life (HDHL) and Scientific Committee Member of the Sabri Ülker Research Foundation. She has published several manuscripts in peer-reviewed journals, trade magazines and other specialised press, and given numerous presentations about EUFIC, itsresearch and activities and other topics to various audiences.

Laura is Spanish has an Italian husband, lived 30 years in Belgium, has two daughters and is passionate about food and health. In her free time she practices aikido, sews and learns Japanese. She loves spending quality time with her family and friends.

Christian Veysseyre, Danone

Christian is a dedicated professional with extensive experience in the food industry. Throughout his career, he has focused on Consumer Insights at local, regional and global levels, particularly in Asia, ensuring that consumers and patients remain at the centre of decision-making. He has developed innovative approaches for identifying emerging trends by leveraging social data and AI-powered solutions.

In recent years, he has been collaborating within R&D teams to create healthy food by design, exploring the ways in which technology and science can contribute to the development of tasty, sustainable, and nutritious food options.
