Avoiding coffee & bread becoming waste

The leaders of the Polish circularity market: Rebread, EcoBean and Cyrkl, teamed up to drive the circular economy forward. With invaluable technological support from the University of Warsaw, the project goal is to unlock the untapped potential hidden within surplus bread and spent coffee grounds often discarded as waste. Food2Good project launches in Warsaw and Prague.

Mission

To revolutionise the way we perceive and manage food waste and to raise awareness about the vast potential of the circular economy.

Scope

This initiative focuses on collecting unsold bread and coffee grounds from participating cafés and bakeries in Poland and Czechia, utilising these byproducts to create a sustainable and healthy beverage and biodegradable flower pots.

Challenge

The project addresses the challenge of food waste by converting what is typically discarded into a valuable product, demonstrating that waste can be a resource.

Process

The process involves the development of recipes for fermenting bread-based substrates using lactic acid bacteria and SCG-derived antioxidants, with the goal of launching a new probiotic drink that exemplifies sustainability.

  1. The consortium

    supported by EIT Food, is a collaboration between leaders in circular economy innovation, highlighting the potential of waste reduction and sustainable product development.

  2. EcoBean

    EcoBean is a pioneer in scientifically advanced coffee waste processing. The company transforms coffee waste into five fractions of sustainable chemicals: coffee oil, antioxidants, polylactide (PLA), lignin, and protein additives with a low carbon footprint. These find applications across various industries, including pharmaceuticals, cosmetics, packaging, food and feed additives.

  3. Rebread

    Rebread develops and commercialises innovative technologies to transform surplus bread from production and trade into functional beverages and food while supporting a circular economy and tackling the problem of food waste. Our solution stands out because it focuses on impact, scalability, and a collaborative model that caters to large industrial players and SMEs, whom we provide with tailor-made R&D services and ready-to-implement production technology licences.

  4. CYRKL

    CYRKL is a tech and consulting company focused on developing and operating digital waste marketplace with a mission to connect waste producers with recyclers in order to turn waste into a resource. It uses data and algorithms for clever matchmaking and verification of users to ensure reliability and transparency. Its team of consultants support the effort by auditing and optimising waste management and promoting circular principles.

    UW is one of Poland's leading academic institutions, known for its high-quality research and education. It plays a key role in fostering innovation and collaboration across various fields, including sustainability and circular economy projects.
