Each year up to 20% of the mushroom production (2.2 million tons) is discarded because it does not meet the specifications set by retailers. This part of the ' leftover' cultivation includes small/deformed mushrooms, misshapen caps, and discarded parts such as stems and caps, which have a high nutritional value, thus should NOT be accepted as waste. Venus is developing technologies to valorize mushroom discards into valuable ingredients for food, nutraceuticals, and cosmetics.
